Using Zikula v1.3, News v 2.6.2.
The screenshots of News in the extdb shows that you can submit an article and assign multiple categories, yet I don't see that on mine. I don't see an option for that in Admin, and I've looked to make sure I don't have any theme or site templates overriding the templates.
What am I missing?

News - multiple categories?

Hi, this is dynamic from the category registry. When you assign more than one category property to point to News you will see multiple categories. So you can have more than 2
depending on how many categories you assign in the category registry.
I have made a ticket for a next version to explain this inline in the admin page of News. That would be a nice place to explain this concept.

you can do that in other modules too. PostCalendar for example has the same functionality.
