Well, I was talking with a webdev friend of mine and he brought up the point that Smarty crashes in PHP6... So what happens when webhosts start updating to PHP6 and Zikula crashes?

Well, considering php6 is not released yet, I fail to see the issue. Smarty 3 is Alpha, and I am sure there are being some concessions being made for php6.

I don't think it will be an issue. We'll have Zikula 2 released before PHP6, and if it's obviously becoming a problem then we could (for example) switch to Dwoo (which is almost completely compatible with Smarty). Alternatively, Smarty 3 as mentioned by Dave could be out and in the wild. No need to worry, at least not yet...
