When someone tries to register on my site they get the following error
Fatal error: Call to undefined function: filter_text() in /home/httpd/vhosts/ilivetoshop.com/httpdocs/modules/NS-NewUser/user.php on line 593
What could this be?

Well, it is, I think, a legacy function, and all of these were removed in .750, hence the reason I asked.
Try re-uploading the NS-NewUser folder (an upgrade to .750 would probably solve the problem as well....)

I don't know if this will effect anything else, but I ended up just deleteing the function filter_text() from the file...would this cause any probelms elsewhere?

Possibly...
You should really upgrade your site to .750, if you can.
